Almond Chocolate Chip Oatmeal Cookies
I love almond and chocolate together. The traditional chocolate cookies however if they have nuts tends to be walnuts. I like walnuts too, but almond and chocolate just taste better to me together. This is my take on an old favorite of chocolate chip cookie. Keep in mind that this recipe uses half the fat and sugar you typically find in cookie recipes. They're a little drier since they don't have the same fat content. They're also more hearty because I made them with whole wheat flour. It's not a diet food though, don't eat too many of these. This is a however is a good tasting cookie that won't completely add to the muffin tops.
Ingredient:
1/2 cup butter, softened at room temperature
3/4 cup brown sugar, firmly packed
2 eggs
1 tsp vanilla extract
2 tsp almond extract
1 1/2 cup almond, coarsely chopped
1 1/2 cup chocolate chips
3 cup old fashion oats
1 cup whole wheat flour
1 tsp baking soda
Directions:
1. Preheat oven to 350F
2. With an electric mixer, beat butter and sugar until smooth.
3. Add eggs, vanilla extract, and almond extract and beat.
4. In a food processor, add the oats and coarsely chopped. Do not over process. You want some texture, but this will give it a more subtle texture.
5. In another bowl combine the flour, baking soda and oats.
6. Add the dry ingredients to the wet ingredients and mix well
7. Stir in the almonds and chocolate chips.
8. Drop about 1 Tbs of cookie mixture onto a non-greased cookie sheet.
9. Bake for 6-8 minutes.
10. Remove and lightly flatten with the back of the spatula. Cook for 1 minute on the cookie sheet.
11. Place on a wire rack to cook completely or eat and enjoy!
