Watermelon Mint Salad

My daughter had her birthday this past weekend and we had so much leftover watermelon. In addition for Bay Area California weather we had a warm weekend in the 90s. So to add a twist to plain typical watermelon, I added mint and lime. A great, healthy dessert on a summer evening.

Health benefit
Watermelon is packed with Vitamin C and Vitamin A (beta-carotene). These two antioxidant has been found to lower heart disease. It also contains the carotenoid lycopene which is also found in tomato and has been shown to reduce prostate cancer risk.

Ingredients:
1 watermelon (8-10 cups)
1/2 c. mint, thinly diced
1/4 c. lime juice
2 Tbs. lime zest.
Salt

Directions:
1. Cut your watermelon into 1 inch cube. Place watermelon in mixing bowl.
2. Add the mint leaves, lime zest, and lime juice. Add a pinch of salt to bring out the sweet flavor of the watermelon.
3. Chill the watermelon in the refrigerator and serve on a late evening. This pairs well with some desert wine as well.
