Cottage Cheese Pancakes
This morning I was thinking I'll just have some eggs and fruit for breakfast. My daughter however requested pancakes, well first she requested cookies for breakfast. So I made her some oatmeal cottage cheese pancakes. I normally would not eat too much oatmeal. Although it is whole grain, I found that when I am looking for fat lost it is best to limit the whole grains and other high starch products. If you are going to eat high starch it may be best to eat in the morning since you have all day to burn those calories.
Cottage Cheese Pancakes
This pancakes are a great source of protein and calcium. My littlest daughter loves to eat them with some applesauce or maple syrup. They are simple and healthy and pairs well with applesauce, jam, or by itself. Although this morning they place chocolate chips in them and re-heat to melt. Oh well with health.
For cooking, oil for the pan is optional. With a non-stick skillet I do not find the need to use oil or butter on the pan although I will do a light spray of oil to make it easier to flip. I think this is a great substitution for your traditional pancake and a healthier alternative.
Ingredients:
1/2 c. old fashion oatmeal
1 c. cottage cheese
1/2 c. almond meal
3 egg whites
2 Tbs. almond milk
1 tsp. vanilla extract
Directions:
1. Pre-heat skillet over medium-low heat
2. In a blender, blend the oatmeal for a finer texture
3. Add remaining ingredients into blender and blend until mixed.
4. Spray some cooking oil on the pan or add Pour silver dollar size pancake, about 1/4 c. of batter.
5. Cook on skillet until edge is cooked. ~1-2minutes.
6. Flip the pancake and cook additional 1-2 minutes.
7. Serve with some healthy pancake toppings and enjoy.
