Fig and Pancetta Sauteed with Spinach
Figs are delicious. They're sweet and juicy and taste like candy to me. I love the summer because that is when all the great fruits are in peak, including figs. Normally I just eat figs by themselves or with some yogurt, but today I wanted to combine some leafy greens to my fig so that I can increase the fiber value and add more nutrients.
What better to pair with sweet figs then something that is salty like pancetta? Adding the greenness of spinach provides you with with a nutritional kick and makes the dish more filling. The result is a savory, garlicky, dish that has a great combination of sweetness and salty in each bite.
Fig and Pancetta Sauteed with Spinach
Ingredients:
1 Tbs. olive oil
2 Tbs. garlic, chopped
1/2 onion, thinly sliced
1/2 c. pancetta (~2 oz.)
7-10 figs, quartered
3 c. spinach
Directions:
1. In a skillet over medium-high heat, heat olive oil.
2. Add onion and garlic and cook until onion is tender.
3. Add figs and spinach and lightly toss over heat until spinach just start to wilt. About 2 minutes.
4. Remove from heat and serve. Season with salt and pepper if desired.
Dinner: We went out for dinner at Famous Dave's. I had not been there before but had heard they have good brisket. So that's what I ordered. I shared an order of Texas Brisket with steam broccoli on the side. Skip the cornbread that is included in the meal. The brisket was really tender and delicious, but I doubt it was low calorie. The brisket and broccoli was filling enough for me to call it dinner. At home I had a bowl full of cherry and called it a night.
Workout
I had hope to go running with the hubby, but the kids were overtired so we had an early night. So at home I did some pilate moves, lift some upper body weight and did squat and lunges for the lower body. Hopefully a run is in order tomorrow. I will try and post some pictures of workout moves in the future.
