Mango Tart Green Smoothie
Another smoothie I would totally have during the summer. Hmm, maybe I just associate smoothie and summer together because they are so refreshing. This smoothie will delight you. The collard greens add a mild taste to the smoothie and is over power by the mango and lime. The mango is sweet and adds a creamy texture, while the lime adds a nice tartness. The apple addition gives the smoothie some body. I know it's not summer anymore, but this smoothie combination has a very fresh bite to it that I imagine myself sipping on it on a breezy summer night. The cantaloupe has a nice sweetness to it and the fresh mint leaves adds a refreshing touch. Of course you can leave the spinach leaves out of the recipe, but I like adding the green into my smoothie for extra health kicks. Very simple, very refreshing.
1 c. coconut water or water
2 c. mango (~ 1 mango)
2 Tbs. lime juice
1 tsp. lime zest
1 c. apple, cored and chopped (no need to peel)
2 c. collard green, stemmed and coarsely chopped
Directions:
1. Combine all ingredients into blender. Start with liquid, fruit, and end with greens.
2. Blend until smooth. Start slow to break up any ice or frozen fruit and speed up the blender for smoother texture.
3. Serve immediately and enjoy!
