Sesame Seed Crackers
I have been searching for a way to eat cheese and crackers, but not actually eat the combination of carbohydrates and fat. The combination of fat and carbohydrates such as with bagel and cream cheese or a cheeseburger is a match made in heaven if you want to gain weight. Carbohydrate and fat eaten alone has a different affect on our hormonal insulin level compare to when they are eaten together.
These crackers will not have the same affect as the store brought crackers because they are made not with flour, but with seeds. The chia seeds are the glue to the crackers, the seeds are what give the texture and crunch. They have a nice crispy texture to them. Now when my kids want to eat hummus, cheese, or peanut butter I have a cracker for the delicious spread.
Ingredients:
- 1 c. white sesame seeds
- 1 c. black sesame seeds
- 1 c. sunflower seeds
- 1/2 c. chia seeds
- 1 c. water
- 2 large garlic cloves
- 2 Tbs. nutritional yeast (optional)
- 1/4 tsp. sea salt
- 1/8 tsp. black pepper
Direction:
- Preheat the oven to 325F
- In a blender, blend the water and garlic cloves.
- In a large bowl, mix the chia seeds and garlic water. Let sit for 15 to 20 minutes .
- Add the remaining seeds and other ingredients.
- Line a large baking sheet with parchment paper. Spread the seed mixture thinly and evenly on the parchment paper.
- Bake for 30 minutes. Flip it over and bake for an additional 30 minutes. (Note you can either use a pizza cutter to slice the crackers before you flip it or you can wait until the crackers are fully cook and break them into smaller pieces. I prefer to slice the crackers so they are all roughly the same size)
- Allow the crackers to cool and store them in a container. To prevent the crackers from becoming soggy, place in the bottom of the container a sealed bag of uncook rice with has been puncture with a fork.
